Chicken stir fried veggies



This dish is very simple and can be prepared within a few minutes. If you are expecting guests and wondering what to prepare try your hand at this dish which will be ready in a jiffy.


Ingredients 

Chicken breasts                2 pieces
Baby corn                          5 pieces
Fresh Mushroom              1 packet
Zucchini                            1
Onion                                1
Sesame seeds

Procedure
Cut the chicken in long strips and wash it and let the water drain completely. Now marinate it with 1tblsp soy sauce , 1tsp pepper, 1tblsp ginger garlic paste and little salt. Keep it for 15 mins. In the mean time cut the veggies according to the size you prefer. If you cut it length wise it looks better as the chicken is also cut into strips.
Take a wok or a deep pan and add some oil and add garlic which is cut in small pieces, add the onion and saute it add the marinated chicken and lightly fry it till it is done . Add the cut veggies and saute it . Let it be a bit crunchy .Check for salt and spice. Fry the sesame seeds in a pan without oil and sprinkle it on the chicken.

Spinach with chicken .



Spinach  the creeper spinach in konkani it is called valche bhaji. This vegetable is grown mostly in every ones backyard in the villages.It is very healthy as well as tasty. There are different kinds of preparation one can do with this vegetable. It all depends on your taste and preference. You can add prawns or chicken and if you want it the veg version you can add black eyed beans or kulith ( horse gram) and even tur dhal. In this recipe I have added chicken as my daughter and husband love it with chicken. You can try it out and see if it pleases your taste buds. It can be served with rice or even panpole which goes very well with this dish.

The ingredients for this dish are very simple and basic.

Dry roast all the below ingredients

Red chilli                 5
Coconut                   1/2 coconut
Coriander seeds       2tblsp
Jeera  (CUMIN)      1/4 tsp
Mustard                   1/4tsp
Onion                      1/2 or 1 if small
Garlic                      4cloves
Turmeric powder     a pinch
Pepper   corns           5
Cloves                       4
Cinnamon                  small piece

You can use a tender chicken weighing around 1kg.

Procedure
Clean the spinach and wash it well . Boil it in the cooker with one onion and tomato. In another vessel take some oil and fry one small onion and boil the chicken . Once the chicken is boiled add the ground masala and give it a good boil and then add the boiled spinach. Your dish is ready to be served. You can eat it with boiled rice or Panpole.






Baked Brinjal with Minced Meat

Ingredients

Purple Brinjal ( aubergine)   2 large
Minced meat     1/2 kilo
Onion                 2
Tomato               2 
Garlic                 5 cloves
Pepper powder  1 tsp 
Tomato paste     4tblsp
Salt (to taste) 
Oil 

For the white sauce

White flour     3tblsp
butter              4tblsp
salt



Wash the minced meat and keep it in a strainer to drain. Slice the brinjal in round slices and keep it in water so that it does not discolour.
Chop the onion finely, and chop the garlic. Now take some oil in a big pan and add the chopped garlic and let it fry for some time once it becomes light brown add the chopped onions and saute it. Once the onions soften add the tomatoes and let it fry well. Now add the pepper and salt. Add the mincemeat and mix it along with this and let the meat boil well. Add the tomato paste and let it mix well along with the meat. 

The brinjal can be lightly fried and added or you can use it as it is.


Take a baking tray and put some oil or butter or if you want to avoid extra calories omit the butter and oil. Put the mincemeat on the tray and now put the brinjal, layer it in the same way and finally add the white sauce. Mozzarella cheese can be added.


Bake it in the oven till the top turns brown.

Pasta with Spinach



Ingredients

Pasta      1 cup
Garlic     2 cloves
Onion     1
Tomato   2
Spinach  1 bunch
Pepper
Salt
Olive oil

Procedure  

Boil the pasta al dente and pass it under cold water to stop the cooking and keep it aside.

In a pan put some oil and some finely chopped garlic and saute it lightly. Add the chopped onion and saute it then the tomatoes which are finely chopped. The spinach has to be cleaned washed and chopped fine and added to  the tomato and onion mixture. Add the pepper and salt and put the boiled pasta in this mixture. Serve it hot.
