Chicken Rolls


Ingredients

Chicken breast   1/2 kg
Mushroom           10
Onion                   2 medium

To  grind corriander  leaves
ginger                1 inch
garlic                 5 pods
green chilly        4
one cube cheese
lemon juice
salt

Procedure

Grind all the above ingredients into a paste and keep it aside. Take the chicken breast and trim the fat cut it in slices  wash it and pat it dry. Flatten the chicken breast and apply the ground masala and let it marinate over night.
For the filling cut the onion very finely and fry it add the finely cut mushroom and let the water dry . Add little pepper and salt.This is a filling to be put inside the flattened chicken breast.
Take the flattened chicken breast and put little filling in the centre and put a piece of cheese and roll the chicken tightly . You can dip it in egg and bread crumbs or shallow  fry it just by dipping in egg.Serve it hot.

Avocado and Chicken Salad

Ingredients:

avocado                                     1
boiled and shredded chicken       1 cup
olives de-seeded                        a few (optional)
mayonnaise                                2 tablespoons
lemon juice                                 1/2
olive oil                                      1 tblsp


Procedure:

Put the avocado and shredded chicken and olives in a bowl . Prepare the dressing by mixing the mayonnaise, lemon juice ,olive oil and little salt.
Pour this dressing on the avocado and chicken and finally garnish with coriander leaves.



Bread Pudding

INGREDIENTS:

BREAD     6 SLICES
EGGS        3
MILK        500 ML
RUM         2TBL SP
SUGAR     7TO 8 TBL SP
SUGAR  FOR CARAMELIZING 5TBL SP







PROCEDURE:

1.) TAKE A BOWL AND BREAK THE BREAD PIECES AND PUT IT IN THE BOWL ADD THE MILK AND LET IT SOAK FOR SOME TIME. BEAT THE EGGS AND ADD IT . NOW ADD THE SUGAR .
2.) IN A DEEP BOTTOMED PAN TAKE THE SUGAR TO BE CARAMELIZED AND KEEP IT ON LOW FIRE AND KEEP STIRRING IT FOR A FEW MINUTES . ONCE IT STARTS CHANGING COLOR BE VERY CAREFUL THAT IT DOES NOT BURN, IT WILL BECOME DARK BROWN AND START BUBBLING NOW ADD SOME WATER AND SWITCH OFF THE GAS. TAKE A VESSEL IN WHICH YOU ARE GOING TO STEAM THE PUDDING AND ADD THE CARAMELIZED SUGAR . JUST BEFORE PUTTING ALL THE ABOVE MIXTURE IN THE VESSEL ADD THE RUM AND JUST MIX IT ONCE AND POUR IT IN THE VESSEL AND STEAM IT IN FOR AROUND HALF AN HOUR . BEFORE REMOVING CHECK BY INSERTING A KNIFE IF IT COMES CLEAN IT IS READY. IT CAN BE SERVED HOT OR COLD.
